Banana Muffins

Free Banana Muffin Recipe

Free from egg, dairy, nuts and gluten

55g dates
55g sultana   
2 medium ripe bananas
225g rice flour
1 tsp baking powder
1 tsp bicarbonate of soda
1 tsp cream of tartar
1 tbsp vegetable oil
250ml apple juice
1 tbsp date syrup

Preheat the oven to 200ºc. Grease a non-stick muffin pan. Chop the dates and set aside along with the sultanas. Coarsely mash the bananas with a fork in a large bowl and add the dried fruits. Sieve together the flour, baking powder, bicarbonate of soda and cream of tartar, then briefly stir into the fruit along with the liquid ingredients. Pour in the oil, juice and syrup and stir thoroughly. Spoon into the muffin pan and bake for 15 - 20 minutes, or until firm to touch. Leave the muffins in the pan to cool slightly and serve warm.
